Nappa cabbage slaw

Dressing
  • lime juice 2 tbsp
  • vinegar, apple cider 3½ oz
  • vinegar, rice wine 2 tbsp
  • olive oil 2½ tbsp
  • honey 1½ tbsp
  • garlic, chopped 3 cloves
  • marjoram, fresh, chopped 2 tbsp
  • lime zest 1/4 lime
  • cinnamon, ground 1/8 tsp
  • salt, pepper to taste
  1. In a small bowl, using a whisk mix oil, vinegars and lime juice.
  2. Stir in herbs and mix well. Zest amount refers to the outer layer of 1/4 medium-sized lime.
  3. Add enough honey to bring to desired sweetness, just enough to balance the acidity of vinegar and lime.
Vegetables
  • nappa cabbage 1 medium
  • radicchio or treviso 1 or 2 leaves
  • sorrel or lovage (optional) 5 leaves
  • onion, yellow 1/4 medium
  1. Shred vegetables and place in large enough bowl.
  2. Pour dressing over vegetables and mix thoroughly.
  3. Best if stands at room temperature for 15 minutes or more before serving. Stir occasionally if made far ahead of serving time.
Quantities in the recipe are flexible and can be varied quite a bit depending on availability of ingredients and individual preference. Consider the amounts given as a starting point for experimentation.
